 I recently attended a conference hosted by a Tribal organization on a reservation in New Mexico Indian Country. The cuisine in every restaurant reflected the culture of the Pueblo people, from brown butter corn chowder to coconut porridge and cherry compote and enchilada breakfast casserole. The menu was a constant reminder of the land and the people welcoming its guest.  

Great catering captures the essence of the occasion, offering guests a preview of what is to come. The right flavors, presentation, and service all combine to create that crucial first impression that sets the stage for the entire event. 

The Backbone of Logistics 

Beyond the flavors and aromas, catering is a logistical linchpin. Think about the sheer coordination required to serve a hundred guests simultaneously, each plate a work of art. The same applies for a boxed lunch scenario where a large group is sharing a working meal to get through a packed business meeting agenda; in which case service needs to be simple, fast, and clean, but also engender comfort and encourage continuity. It is a dance of precision that goes unnoticed when done right but can derail an event if mishandled.  

Catering encompasses everything from menu planning and ingredient sourcing to timing and presentation. It requires seamless integration with the event’s schedule, ensuring that meals are served hot, drinks are poured cold, and everything runs like a well-oiled machine. How do you create seamless integration with the catering facility? Assign a point of contact deeply familiar with your agenda to communicate and support the kitchen preparing and serving meals in a way that supplements and enhances your gathering.

We provided her with a menu an hour before lunch and offered to order any item she chose to make sure she was nourished and energetic for the entire day. With careful planning, her inconvenience and our additional expense could have been avoided.

Finally, magnificent events are remembered for the moments they create, and many of those moments revolve around food. Think of the excitement of a live cooking station where chefs flambé desserts in front of guests, or the shared joy of a beautifully crafted charcuterie board. These are the experiences that stick with people, the anecdotes they share long after the event has ended. 

I attended a supplier diversity event in Richmond, Virginia. I was thoroughly bored with the food until we got to the evening reception with a variety of culinary vendor booths graciously preparing and serving the most interesting and lavish tastes. I expanded my network with lots of new people conjoined with me in this experiential journey. To this day, I do not remember what I was disappointed about with the earlier sessions. All that I know is I went home thinking how magical the evening was, having discovered such great new tastes and fabulous service. Great catering can cover a multitude of sins! 

Food has a unique way of bringing people together. It breaks down barriers, fosters conversations, and creates a sense of community.
